Of course for kids, having a weekly or monthly celebration or a healthy reward is something more tangible that they can work towards. The way it works in our house is, if our daughter eats a rainbow for 6 days in a row, she then gets to choose a fun activity for the family to do together on the 7th day.</p>

<p>If you want to set a bigger goal you could set a reward up using things that your kids really want such as more computer time, or maybe a new toy!</p>
<p>Celebrating your child&#8217;s healthy eating is a good way to encourage spending quality time together as a family. If you can incorporate physical activities into your celebration then their bodies are also going to benefit from the healthy exercise which helps to instill yet another important part of healthy living!</p>

<p>Quinoa is a staple in our household.  It is a super grain, containing all 9 essential amino acids, making it a “complete” protein.  Quinoa is also high in fiber, iron and calcium!  It is inexpensive and extremely easy to make.  I couldn’t think of a better way to showcase it on Today I Ate A Rainbow, than by naming it after them!</p>
<p>Rainbow quinoa is bursting with color and flavor; from slightly crunchy broccoli to sweet carrots and red bell pepper.</p>
<p>Pairing with it today are delicious marinated tofu spring rolls.  Balancing out our rainbow of vegetables, these Asian-inspired rolls also contain raw asparagus, shiitaki mushrooms, avocado and cilantro.  This is a fancy meal in disguise as it isn’t difficult to make at all!</p>
<p><strong>Ingredients </strong><strong>For the Quinoa<br />
</strong>2 cups water<br />
1 cup quinoa, rinsed<br />
1 cup chopped broccoli<br />
¾ cup finely chopped carrot<br />
¾ cup finely chopped red bell pepper<br />
2 cloves garlic, minced<br />
Low sodium vegetable stock &amp; water for sauteing<br />
2 tsp Braggs Liquid Aminos or low sodium soy sauce</p>
<p><strong>For the Spring Rolls<br />
</strong>6 spring roll wrappers<br />
14oz extra firm tofu, drained and pressed with paper towels<br />
4 shiitaki mushrooms, cut into pieces<br />
1 small bunch asparagus, washed &amp; bottoms trimmed<br />
1 avocado, cut into pieces<br />
1 bunch cilantro, washed and stems removed</p>
<p><strong>For the Tofu Marinade<br />
</strong>3 TB tamari<br />
2 TB seasoned rice vinegar<br />
1 TB sesame chili oil<br />
2 TB agave nectar</p>
<p><strong>Directions</strong></p>
<p>Start with the marinade for the tofu.  In a small bowl, whisk together the tamari, rice vinegar, sesame chili oil and brown sugar.  Slice the tofu in ½ inch thick pieces and lay flat in a baking dish. Pour marinade over tofu and put in fridge.  Turn tofu over after 15 minutes and allow tomarinade 15 minutes more on the other side.</p>
<p>Bring 2 cups of water to boil in a medium sized pot. Add quinoa and reduce heat to low.  Cover and simmer for about 15 minutes, or until all water is absorbed.</p>

<p>While the quinoa is cooking, heat a saute pan over medium heat.  Add ¼ cup vegetable stock and add broccoli, carrot, bell pepper and garlic.  As the vegetable stock starts to disinegrate, add ¼ cup of water at a time to allow vegetables to soften (about 10 minutes).  Add braggs liquid aminos or soy sauce and stir to combine.</p>
<p>Add quinoa to cooked veggies.</p>
<p>To assemble the spring rolls:  Remove marinated tofu from fridge, but do not discard the marinade. Brifely soak each rice paper sheet in warm water (1 min) to soften and set on a kitchen towel to dry.</p>

<p>In the middle of each prepared rice paper wrapper, start with layering a few slices of tofu in the middle.  Next, dip a few pieces of sliced shitaki mushrooms in the marinade and place next to the<br />
tofu.  Place one asparagus stem on top, followed by a few pieces of avocado, and lastly a few sprigs of cilantro.  Fold like a burrito and cut down the middle.</p>
