Welcome to Green snack day!! Getting our kids to eat green fruits and veggies is so important for their optimum health as they are loaded with vitamins, minerals, fiber and phytonutrients!  If that isn’t an easy task at your house I would highly suggest making green smoothies or juice (if you have a juicer)!  It’s an easy way to get those greens into your kids!  We usually put in a few cups of whatever fruit we have on hand, a cup of baby spinach and a cup of either coconut water

Next up on our food rainbow is Yellow such a cheerful color and oh so yummy!!!!  It’s usually pretty easy for everyone in our family to get their yellow for the day because we love so many fruits and veggies in this color group! We are working our way through our food rainbow! Today is Orange day!!! Hannah enjoyed sliced orange peppers,  cubed up cantaloupe and orange slices!  It can be fun to come up with different ways of presenting fruits and veggies! Mini Eggplants…So Cute!!!

I must admit that I bought these little eggplants because they were so darn cute!!! I’ve never seen such tiny eggplants. I wasn’t sure what to do with them so I decided to keep it simple. I just tossed them in a pan along with some zucchini, white onions, olive oil, sea salt, and a little bit of pepper for about 10 mins and served them with some rice and Spanakopita.
