Happy Healthy Easter Bunny

I’m not sure who decided that every holiday needs to revolve around candy and chocolates…but regardless that’s the way it is and I think one of the best ways to cope is to find ways to incorporate fruits or veggies into holiday occasions to help balance out all that extra sugar!
At Easter Hannah and I like to make this cauliflower bunny as part of our centerpiece…add a little dip and it’s gone by the end of the evening!

We just cut up a head of cauliflower (we buy two and cut up both and serve the extra in a veggie tray), use extra long tooth picks and stick on end into a small 3 or 4 inch styrofoam ball, then you add the rest of the features with whatever produce you like and have on hand! When you’re guests are ready to dig in they just pull out a piece of cauliflower and use the tooth pick to hold on as they dunk the cauliflower into their favorite dip.
It’s cute, fun and good for you…you can’t go wrong with that combination! We hope you have a happy and healthy long weekend!

I sure am glad that the first half of my morning errands ran long and I didn’t make it to the grocery yet to buy our Easter dinner things. Because if I had, I’d be heading back for a cauliflower!
My little one took one look at this and said, “What did Hannah make? What did she make that bunny’s face out of?”
(Yes, she recognizes your blog.)
So we are totally going to be making one of these for Easter dinner with extended family.
