Healthy Snacks by Color – PURPLE

This is our final day of our snacks by color series and it happens to be my daughters favorite color…PURPLE!!!! It can be a challenging color group to eat everyday as there aren’t as many options as the other 4 color groups.

Hannah enjoyed snacking on olives, frozen blueberries and purple carrots!

Eating a Rainbow of fruits and veggies is a fun way to shop for and eat produce! So when it’s time to serve up a meal or snack think of eating as many colors as you can!

We just made eggplant chips, based on your recipe. I got a little crazy though, and sprinkled (ok, dredged
) them with garlic, Italian seasoning and Parmesan cheese. The thick-cut ones were still floppy and kind of eh, but the super-thin ones that got crispy and browned were amazing!
(And my 3 year old daughter got to paint them with olive oil, “Just like Hannah!”)
She also pointed out that “Hannah has sea salt.”
Sorry honey, Mama only has plain ol’ salt.

LOL too funny about the Sea Salt…guess Mama needs to switch once you’re out
She thinks Hannah is the coolest. As I was cutting, she was telling me “Cut them as thinly as possible, without cutting your fingers!”
Oh, and I can’t tell you how excited we both were to realize that black olives count as purple!

Yes!!! That was Hannah’s idea because she LOVES black olives!

Not to hijack your post, but I had to share:
The eggplant chips were way floppy after being in the fridge overnight, but still tasted good, so I cut them up teeny, and cooked them in olive oil with some onions, peppers (yellow and orange) and sausage (turkey “loop” sausage cut up) then mixed in some rice. (In retrospect, I should have added some spinach.)
I didn’t even have to add any seasoning beyond what was already on the eggplant. It was amazing. I hope I can recreate it!
