Mini Eggplants…So Cute!!!

I must admit that I bought these little eggplants because they were so darn cute!!! I’ve never seen such tiny eggplants. I wasn’t sure what to do with them so I decided to keep it simple. I just tossed them in a pan along with some zucchini, white onions, olive oil, sea salt, and a little bit of pepper for about 10 mins and served them with some rice and Spanakopita. Fun Ways to Celebrate Eating a Rainbow!

The biggest reward of eating a rainbow is a healthy body! Of course for kids, having a weekly or monthly celebration or a healthy reward is something more tangible that they can work towards.
