Yummy recipes of fruits and vegetables in season

Summer is a great time to rekindle your love for fresh fruits and vegetables. So many great produce items are in season and a fabulous way to stay healthy during the warmer months. The following recipe ideas are a great way to incorporate fresh produce into your diet all summer long!

1) Savory Italian Bruschetta

This Italian summer staple is very easy to make and it tastes great. All you need are summer cherry tomatoes, basil, garlic, chives and olive oil. Cut the tomatoes and mix all of the ingredients together. You can then keep it in the refrigerator over night to soak up the juices. Then serve it over a crusty pieces of bread. You can also use slices of pecorino, fresh pear, walnut and honey for a more sweet version of bruschetta.

2) Greek Yogurt Treat

Buy Greek yogurt, honey and a melange of your favorite fruits from the store. Combine them together with a tablespoon of sugar for a great desert. If you want this yummy treat in the morning, then you can add granola for a little more substance.

3) Simple Fruit Salad

For a great fruit salad, buy grapes, melon, berries and anything else you love to create a fabulous summer treat. Chop the fruit into little bits and sprinkle it with a little bit of sugar. If you are not eating it right away, then squeeze a lemon on it to help it stay fresh. The longer a fruit salad sits in the fridge then the more juices it will produce.

4) Shish Kebab

A shish kebab is a great way to eat some summertime vegetables. You can skewer a tomato, onion, carrots, and more to create a colorful and healthy kebab. Place the skewers on the barbecue and sprinkle them with some savory seasoning. Once they look crispy enough, then serve them with a homemade pasta or potato salad.

These four recipes are easy to do and great for summertime gatherings. You can fix them up in no time and they are all quite healthy. You will feel refreshed and more in tune with the summer if you keep up your recommended daily serving of fruits and vegetables. If there is ever a time to stay in shape, it is now during swimsuit season that you want to look your best!
